The story
Beach plums grow wild in the dunes along the Cape Cod National Seashore, and for about two weeks every September we pick them by hand. They cook down in small copper pots with a little cane sugar and nothing else — the fruit carries all the pectin it needs. The jam comes out tart, faintly floral, and a little stubborn, the way the fruit is. Good on toast, better on a cheese board.
